Estate & History
The estate has been in the family's hands since 1814. The Stahl family began growing wine in 1984; the restaurant was added in 1990.
Christian Stahl took over his parents’ winery in Auernhofen, near Rothenburg ob der Tauber, in 2000. Over the years, he expanded their 1.5 hectares of vineyards to its current 30 hectares, with sites on the Tauber, Main and Steigerwald.

Processing of grapes from roughly 30 hectares of vineyards, totaling 250,000 - 300,000 bottles annually. 1,000 hours of manual labor per year. For natural, authentic wines. Full of character. Winemaker and chef — Diplom Ingenieur Weinbau und Önologie. Contemporary Franconian wines. A favorite of critics, connoisseurs and top restaurateurs from around the world. No Bocksbeutel nostalgia. Instead: Bordeaux, Burgundy and flute bottles under Stelvin screwcaps.
He and Christoph Götz form the congenial creative center of the Stahl-estate’s cuisine.
Renowned wine journalist Stuart Pigott declared Christian Stahl as the 2008 "Young Winegrower of the Year". Honors from FALSTAFF DEUTSCHLAND as "Newcomer of the Year" followed in 2012. One year later the estate received its third grape from the GAULT MILLAU WEIN GUIDE. Its SCHEUREBE [zweimännerwein] was named 2015 Innovation of the Year by the Frankfurter Allgemeinen Sonntagszeitung. The 2018 Silvaner was winner at the Gourmetwelten Lagen-Cup. His Müller Thurgau has also won numerous national and international prizes at wine competitions.
The most recent highlight was his declaration as “2018 Winemaker of the Year” by Stuart Pigott in the Frankfurter Allgemeine Sonntagszeitung.

Gudrun and Albrecht Stahl
Gudrun trained in commercial banking and is a master of home economics. Albrecht is a master farmer and butcher. The parents. Laid the foundation for the company. Started winegrowing in 1984.
Continue to provide advice and a helping hand as needed.
Chef trained in classic and haute cuisine. A fanatic for distinctive tastes. Down-to-earth with a true passion for cooking and raising animals. Together with Christian Stahl, he forms the congenial creative center of the Stahl-estate’s cuisine.
Responsibilities: diverse. Husbandry: “Bresse” chicken, lamb, processing of meat, cuisine. Mise en place. Sauces. Sides. Desserts.

M. v. Dungern
Trained as winemaker at Winzerhof Stahl. Straight shooter. Vineyard manager. Vine whisperer. At home outside. Together with Christian Stahl, forms the perfect tag team for vineyard planning and oenology.
Responsibilities: Organization and scheduling of vineyard work, perfect pre-selection of grapes and determining optimal ripeness for grapes and when to launch harvest.
