As a winemaker and chef, I always focus on the interplay of flavors, and the experience of a chef benefits the creation of wines with strong character and individuality — it sharpens the senses and refines the palate.

Each wine, with its own variety of flavor nuances, is a wonderful companion — whether during the day or in the evening, for a multi-course menu or a dinner for two.

Once upon a time

Over 200 years ago, the Stahl family took over the mixed-use farm in Auernhofen, near the lovely Tauber Valley, between Würzburg and Rothenburg ob der Tauber.

1984

Stahl Family and Wine

Over the years, the focus of cultivation shifted to viticulture, and the farm became a dedicated winery. The first two vineyards were purchased.

1990

Best Pairing

Opening of the wedding venue on the estate, creating space for the most exciting union of food and wine aromas.

2003

Education – Studies – First Steps

Training as a winemaker – degree in engineering – the first wines are vinified and receive praise from Stuart Pigott and Gault Millau.

2007

Wedding & Generational Change

Christian Stahl and his wife Simone marry and take over the winery. From an initial 2.5 hectares of vineyards, they expand over the years to 40 hectares by 2023, cultivating slopes along the Tauber, Main, and Steigerwald.

Construction of the first cellar – prominent first user: Stuart Pigott with his “10 Rows” project

Launch of the fine dining concept in the wine lounge – 9 courses paired with Stahl wines
